Update on Heavy Whipping Cream

Please check your heavy whipping cream to make sure that you are choosing the 36% heavy whipping cream. The gable number should be 0619 or 06446, which ensures that the cream is from MorningStar West. To ensure that the cream is 36% or 38% butterfat, the first ingredients should be heavy cream. The following labels are 36% heavy whipping cream, Jersimaid, Alta Dena, Lady Lee, Model Dairy, Dairy Fresh, Producers, Stater Brothers. The only three retail labels that are considered 38% heavy whipping cream are Shamrock, Carnation and Ralph’s Private Select. The Ralph’s Private Select recently changed from 36% butterfat to 38% butterfat. If you were previously using the Ralph’s label, please change to a 36% heavy whipping cream. If you would like to continue using the Ralph’s Private Select label, please contact me to recalculate your meal plans. The difference between 30%-35% whipping cream and 36% -38% heavy whipping cream is in the ingredients. The first ingredient for 30%-35% whipping cream is cream whereas the 36% -38% heavy whipping cream is heavy cream.

 

Keto Support Group

I would like to thank everyone who attended our last support group meeting. The meeting was very successful! Special thanks to Linda & Tony Piller for offering their home for our meeting place. Eileen Nakano, Seiko’s mother suggested that we have a recipe exchange and helpful hints for meal preparation at our next meeting. She also suggested that we share a keto directory with one another to develop pen pals or exchange cards on special occasions. Perhaps we could also have the children do a small gift exchange over the holiday. Please notify me if you would like your name placed on the keto directory or if you would like a copy send to you.

Keto Food Tidbits

If you’re looking for a smart & easy alternative to butter or margarine, you should try Canola Gold by Canola Harvest. It is made with 100% canola oil that makes it low in saturated fats. It can be substituted 1:1 for canola oil in your meal plans. It whips very well in heavy whipping cream or sour cream to make yogurt. You can use it in baking, making dips, sauces, gravies or just on top of vegetables. You can purchase it at Vons, Albertsons, or Ralphs. Unlike margarine or butter, it does not have to be refrigerated which makes it great for traveling.

Wallis’ Lemon Pudding

Ingredients: Lemon Juice, Canola Gold or Canola Oil, Hinoichi’s Tofu Soft

Preparation: Combine lemon juice with tofu. Add canola oil and sweetener. Blend until smooth. For best results make at least 24 hours in advance. Serve with a side of bacon, sausage, or spam.
