Vitamin Update

In September, Linda Fillet, our ketogenic diet intern, completed her thesis on the nutritional analysis of the ketogenic diet. Her data was obtained from the dietary intake of 16 children from our center. The objective of the study was to determine the nutritional adequacy of the dietary intake of the children on the ketogenic diet and whether current vitamin and mineral supplementation was adequate to meet the daily recommended allowance. In her conclusion, she noted that the ketogenic diet does not meet the Recommended Daily Allowance for most nutrients without supplementation. The data did not indicate that intakes of Vitamin A, B12, nor Vitamin D were low. However, the data was consistent with literature, that the diet is inadequate in calcium, folate, iron, zinc, Vitamin B complex, and Vitamin C. Even with a daily multivitamin, intakes of calcium and magnesium are likely to be low without additional supplementation.

The Calcium Connection

As of August 1997, the new Dietary Reference Intakes (DRI) for calcium, magnesium, phosphorus, and vitamin D were released by the Food and Nutrition Board of the National Academy of Science. The new values are designed to reflect the latest understanding about nutrient requirements based on optimizing health. The new DRIs for calcium are:

1-3 years 500 mg/day

4-8 years 800 mg/day

9-18 years 1300 mg/day

19-50 years 1000 mg/day

51 years & older 1200 mg/day

High calcium foods on the ketogenic diet include:
cottage cheese,canned salmon or mackerel, tofu processed with calcium, almonds, broccoli, bok choy, kale, mustard greens, turnip greens, cream cheese, cheese. According to the new guidelines, children over 8 years and adults who are on the ketogenic diet require a supplement of 1200 mg Calcium per day. It is recommended to purchase the Vitamin D & calcium if you have limited exposure to the sun. Magnesium supplement is recommended on an as needed basis.

Holiday Pumpkin Pie

Ingredients: Egg, Canned Pumpkin, Heavy Whipping Cream, Canola Oil, Cinnamon

Preparation:. Beat allotted egg into a baking dish. Stir in canned pumpkin and allotted cinnamon. Add cream and canola oil. Bake at 350° for 30 minutes or until a toothpick comes out clean.
