Keto Dairies and Branding
It may seem that there are many different dairies based on the different brands of
cream available in the markets, but often only one dairy provides the cream for all the
different brands. For example, Morningstar West is the dairy that provides the cream to
Jerseymaid, Alta Dena, Lady Lee (Lucky Brand), Ralphs Private Select and Glen View. These
are all 36% whipping creams the only difference is the label. Morningstar creams are
identified by the Plant Code 0619 which is printed on the gable. ( This is the top
edge of the carton opposite the expiration date and is usually clear.)

Sometimes companies change dairies. Recently Knudsen changed dairies and is now using
Dairymans. We are working to get the nutritional information on this cream so until
we do, we do not recommend using this brand.
Dairies may also make changes in the formula. In fact the changes are sometimes made
monthly. Carnation has changed their creams to 38% butterfat. If you are using Carnation
and your meal plan requires 36% cream you may consider switching to one of the creams

Other Cream Tidbits
Cream is quite easily frozen and can be used for popsicles, but cream that is frozen
for later use is not suitable because when it is defrosted it separates.
According to Laura Lasalle a representative from Morningstar, the shelf life of cream
is eight weeks, but by the time it reaches the refrigerator at home it is already two
weeks old. She states that the product is best if used by the expiration date on the
carton.
Good Sam in the News... 
Many of you may have seen the ABC News on March 13th where Dr Roger Huf
was interviewed about the Epilepsy and Brain Mapping Program at Good Sam. Two keto
families were also interviewed. The Mahoneys, whose son is Thomas and
the Tsubotas whose daughter is Satomi. We would like to welcome Satomi
and her family to the Good Samaritan program.

Mozzarella Bake
Made with spaghetti squash
Preparation : Cut squash in half lengthwise
and remove seeds. Boil until fork tender or for greater convenience cover cut squash with
plastic wrap and microwave. When done cooking scrape squash out with fork. Pat dry to
remove excess moisture before weighing. Take allotted portion of fresh diced tomato or
tomato sauce and mix with appropriate amount of butter, margarine, or canola oil . Season
with dried oregano, basil, pepper and lightly salt. Sprinkle measured grated mozzarella
cheese on top. Warm until cheese melts in either oven or microwave. |
